You need to navigate to the thread list on an iPad to reorder threads and remove color changes: There is a corresponding toolbar item (which might be located in the "Tools" menu on tiny iPhone displays). The thread list can be toggled into "Edit" mode, showing additional controls to either delete a color change or reorder the list. I think the video tutorial "Working with Threads" gives the best illustration at 2:00, and although it's slightly outdated the general handling still applies…
