For StitchBuddy text is just a number of shapes - or more precisely of paths. So every aspect how to handle shapes also applies to letters: They can be edited, their contour can be outlined using zigzag, running or triple (bean) stitches, and they can be filled with Tatami patterns. An underlay is added to letters by manually creating lines of running stitches, and move their position in the stitch order before the text - plus potentially removing the parting thread change.
I highly recommend to carefully read the FAQs about defining shapes as well as outlining / filling shapes (as text / letters are shapes, their paths can be manipulated just the same before applying an outline or filling). The same information can be found in the app's searchable help, accessible from the corresponding menu item. In addition you might want to watch these videos detailing the handling of shapes plus this one specifically addressing text. I don't understand the "remove before export to USB" part: Why would you want to remove added text before transferring a design? Maybe you'd like to elaborate this topic…?
